My Grocery Cart

Hey everyone!

I feel like talking about my current “grocery cart” because I am hungry and I went grocery shopping yesterday. Honestly, I love grocery shopping. There is nothing like stocking up on some delicious goodies for the week or couple weeks ahead. I get pretty much the same things each time I go shopping, but I always get a few random impulse buys.

Fruits & Veggies

Avocados- these are essential for every day avocado toast or some sort of rice bowl

Tomatoes- good on sandwiches or in big salads

Mushrooms- I don’t get these every time, but I love mushrooms with eggs, in salads, or dipped in cottage cheese (I know, a little weird)

Blueberries- If they are on sale, they are in my cart. In the summer, they are a staple, but they are always a bit too pricey for me during the winter

Bananas- A classic snack or in smoothies

Asparagus- My favorite vegetable. I usually just roast it in the oven with salt, pepper, and olive oil

Spinach or Arugula- I need some sort of base for my salads

Rice- necessary for sushi bowls or with cottage cheese

Everything Bagels- the ones from a local bakery are my absolute favorite

Sourdough Bread- my go-to for avocado toast

Cheerios- the best cereal

Almond milk- for the Cheerios

Greek yogurt- I go for Fage or Chobani typically

Cream cheese- for the bagels

Gouda- for cheese parties of course

Cottage Cheese- I don’t understand why more people don’t like cottage cheese

Edamame- probably my favorite snack right now. Sometimes I will have it for lunch too.

Seaweed- to add to sushi bowls

RXBARs- my favorite protein bar right now. I like the chocolate sea salt and peanut butter chocolate

Tortilla chips- for queso

Queso- for the tortilla chips

Positivity Posts Are Back

The weather was absolutely beautiful today. It’s February and it was 73 degrees in Indiana. I couldn’t have been more thankful for such amazing weather. I got to sit outside and listen to podcasts. I enjoyed ice cream with some friends and just felt so much excitement for the week ahead.

I have decided on a goal that I want to work on. If you remember my posts from about 2 years ago, you may remember a ton of posts all about positivity. Positivity was my middle name back then and it is something I want to make sure I am being more focused on.

For some reason, I haven’t been my positive self for awhile now. I couldn’t tell you why. It may have become less of a “priority” for me. I don’t want things to be like that anymore and I want to make sure I am looking on the bright side.

This past week I have been focusing on the good things happening and how I can work on my school work and actual work in a way that is productive but also fulfilling in some way. I have been trying to be more excited for my boring classes. I have been trying to say yes more, which is something I feel like I have been doing less.

I know I am happier whenever I see things in a positive light so I am going to continue working on doing all the things I used to suggest for having a positive mindset. By being more thankful and looking at life through a different lens I already feel a lot more content and a lot less stressed out over small things.

Podcast Thoughts #1

I have been listening to a ton of podcasts, mostly business related, but they all tie into our personal development and who we are in some way. Today I was listening to an episode that was talking all about how we need to be more aggressive in our personal development. I don’t know if aggressive is the exact word I would choose. Maybe personal development should be more of a priority or something that we are more intentional about.

Personal development has recently, probably as of this summer, become very important to me. You all know I have been trying to read more, listen to more podcasts, journal, and just be more aware of what I am learning and doing. It is so incredibly important. I feel like I am learning something new everyday.

The podcast mentioned that this development can’t always take place during work, or school, which is my case as of right now. You need to take time outside of your everyday commitments for this. For me, I usually spend 1 or 2 hours on these sorts of things just because I have come to really enjoy it and also benefit from it.

I guess the one thing I want you to take away from this is that you should prioritize yourself sometimes and work towards becoming and even better version of yourself. Find what motivates you to do this. Right now, I really want to learn as much as I can about the business world, communication, how to grow my own business, and just myself in general before I move away from home and start my very first job. What do you want to learn? Whatever it is, go after it. Personal development is completely under your control and can be whatever you make it!

Quick Thoughts

I have so many goals and dreams, big and small. Some I know I will accomplish or reach. Others seem a little big harder and far out into the future.

Set those goals, whether it is to read one chapter of a book each day or move to another country someday. If you work a little bit each day toward them, even in the smallest ways, you can do it. Motivation and the courage to chase your dreams and reach your goals will get you really far, even if they may seem silly or impossible!

See you all in my next post! 🙂

Vegetarian Food Guide: Bloomington, IN

I go to college in Bloomington, IN, which many of you know. GO IU! One thing I probably do too often is go out to eat. At this point I have tried many restaurants, but there are still quite a few I want to try out before graduating in May. But for today, I’m going to do another vegetarian food guide! Finding vegetarian food in Bloomington is really easy. Most places offer some options, but there are a few places everyone loves, but I have trouble finding something vegetarian that I actually think is good, and not just mediocre.

Here are some of my favorite restaurants that a vegetarian can get excited about! I have definitely mentioned some of these places before, but I don’t see anything wrong with shouting out my favorite places a little bit more!

By far my favorite place. I go here the most often of the restaurants I have listed, but that is probably because I am slightly obsessed with sushi. Ami is very vegetarian friendly for a sushi place in my opinion. There are 8 or 9 vegetarian rolls that you can choose from which I think is pretty good! The rolls are simple, asparagus, sweet potato, oshinko, etc. but they are so good. I always switch between getting an avocado and sweet potato roll and getting a shiitake and sweet potato roll. Aside from sushi, the bibimbap there is pretty good! I have only tried it once, but it is so satisfying and you can’t go wrong with the basics: eggs, rice, veggies.

This place is so good and so cute. You also get a ton of food when you go. There is a whole section of veggie plates on the menu, so you can definitely find something that fits your needs and preferences. Besides the amazing main course options, they give you a delicious lentil soup and warm bread with each meal. It is amazing. I usually get one of the veggie plates. Most come with rice, some mix of veggies, a yummy salad, and potatoes.

Rush Hour Station

I just started going here a few months ago, and it has quickly become my go-to restaurant. I usually get my order to go just because it is super fast! There are so many vegetarian options here and pretty much anything that would have meat can have tofu instead. I get the Rice Bowl Deluxe. It comes with rice, egg, cilantro, sprouts, carrots, tofu, and lettuce. It is amazing, I get tofu cooked in a lemongrass sauce because it is a vegan/vegetarian option for the sauces. Everything here is pretty much under 10 or 11 dollars, so it is good for any occasion.

inBloom Juicery

I love smoothie bowls. First of all, they are full of fruit and healthy everything. And they look cute and taste so good. inBloom is a place I recently tried because some days I don’t even wake up early enough to get there by close. Just kidding, that was a bit of an exaggeration. I am usually in class. Anyway, it has acai bowls, pitaya bowls, juices, etc. I usually just get a pitaya bowl, called the pink dragon, which has granola, honey, banana, strawberries, and blueberries on top. But there are a few others that I am excited to try as the year goes on!

A Few Favorites for February

Back with another post about things I have been enjoying. I am probably missing something, but I wanted to keep this simple and just talk about my absolute favorite things right now! Also, the photo I chose to feature has nothing to do with my favorites, I just like it and think its cool 🙂

I just finished reading a book we actually have to read for my international marketing class. We have to do a book report over it in March, but I was so excited about it that I already read it. The book is called Where Am I Eating? by Kelsey Timmerman I definitely mentioned it a few blogs back, but I just wanted to mention it again because I am actually done with it now. It is all about where our food, in the United States, is coming from. It goes into stories about the authors experiences in different countries learning about some of the staple foods our diets (bananas, coffee, chocolate, etc.). The stories I read were informative, sad, hopeful, and overall interesting. I definitely look at the food I eat differently now and appreciate the work that went into producing it.

For my job, I have a part time internship where I am pretty much working on my personal and professional development. For this round of work and activities I am actually getting to listen to podcasts (amazing I know). I have experimented with different podcasts from the list of options and I found one that I actually really like and will continue listening to. Its called In the Arena. The topics range from attracting customers to productive thinking. I have learned a lot and explored topics that I wouldn’t naturally gravitate toward. I am trying to pick episodes about things I don’t know a lot about or that I think would be useful for me to hear. Finally, the intro song get you so excited for the podcast and ready to listen.

I have cut back on my Netflix and Hulu time. I am really focusing more on reading, writing, and taking in my last semester of college. However, there are couple of shows I either keep up with or watch during my free time. This Is Us is a show I have been watching each week on Hulu. I am sure most of you have heard of it because I feel like it has almost taken over. I look forward to it each week, but sometimes I wonder why because it can be so sad. But overall, I think it gives a good perspective on life and the fact that everyone has struggles and tough times in there life. I feel like the show can be really sad, but is also so uplifting at the same time.

Medium is the show that I have been watching in my free time. It is a bit of an older show. I remember my mom watching it all the time when I was in middle school (I think?) and I really liked it too. Its about a medium who works for the district attorney, helping catch the right criminals. Besides the crime aspect, a big part of the show is family and it is fun to see the kids grow up throughout the seasons. There are like 100 something episodes on Hulu, so I have a long way to go, but I’m sure I will get through it soon!

I probably talk briefly about music in all of my posts, so I will just list a few of my favorite songs right now!

“Say Something”- Justin Timberlake feat. Chris Stapleton

“Pray for Me”- The Weeknd feat. Kendrick Lamar

“Two High”- Moon Taxi

“We Do”- LANCO

“Moonlight”- Grace VanderWaal

My white Nike sneakers are my favorite shoes right now. I have always been more of a sneaker girl than any other type of shoe. In middle school I collected different sneakers, so having a solid pair of Nikes that aren’t for running brings me back to the good old days of middle school. I found mine at Marshall’s or Ross (I think?), but they have them on many different websites (linked above).

It isn’t one of my post without some mention of food. Today I’m going to keep it really simple with a sandwich and a seasoning. I love Jimmy Johns, so if I am ever in need of a meal on the go, Jimmy is my man. I also wanted to share a seasoning I love. Many of you may have heard of it or even have it, but thought it would be worth the share. I have been using the Trader Joe’s Everything Bagel Seasoning like crazy. I love it on all types of toast (cream cheese, avocado!!!, and peanut butter). I haven’t put it on anything else yet, but I’m sure it can go great on many other foods!

That is all for my post today! Let me know any of your favorites right now! I am always looking for new things to try, read, listen to, etc.

Vegetarian Food Guide: Nashville, Tennessee

Back with another vegetarian food guide. This time for Nashville Tennessee. For me, when it comes to eating while traveling, I find myself at a lot of places that don’t have a ton of vegetarian options. So adapting what I have is something I do all of the time and actually enjoy. Whether I am finding ways to spice up a salad (which I try to avoid ordering at restaurants) or mixing and matching different sides, finding a meal is never a big problem.

I recently went to Nashville for a couple days with my boyfriend. I am a foodie for sure, so trying new restaurants was at the top of my list. I also feel like when it is cold out, eating and drinking are go-to activities. Lucky for us, we had his uncle with us to show us around and take us to some yummy, classic Nashville restaurants! Because we were only there for a couple of days, I only have a few meals to show you, but each place we went had delicious and comforting food!

Loveless Cafe

This is the only breakfast spot we hit in Nashville, but that is fine with me because it was so good and so satisfying. It is a hot spot in Nashville for sure, and you can tell just by being in the restaurant. There is a lot of seating, but it can get busy. And all of the waiters and employees were super nice and helpful, continually getting us water and biscuits. I ordered a veggie omelet for my meal. I love eggs, so omelets are always a good vegetarian choice. I also had some of the amazing and honestly really adorable biscuits. There were three types of jam so I had to try them all. I definitely recommend Loveless Cafe when you visit Nashville. Between the yummy food choices and excellent service, you won’t be disappointed.

Dandgure’s Cafe

This was the first stop in Nashville because we were so hungry from the drive. My boyfriend saw this place on a list of restaurants Anthony Bourdain recommends in Nashville. It was a cafeteria style restaurant and had all of the classics like chicken, mashed potatoes, mac n’ cheese, etc. I was a little worried about finding food I liked, but I ended up with corn, mac n’ cheese, and some peach cobbler that we shared. There were other veggies and vegetarian friendly sides, but I just stuck with these sides. The mac n’ cheese was super yummy and corn has become one of my favorite foods and I don’t even know why lol. Overall, it was a good, quick stop, and everyone was super nice who worked there.

Hattie B’s Hot Chicken

I was also a little worried about trying Hattie B’s but I ended up liking it and having quite a few options to pick from. Before getting to Nashville, I had heard a lot about Hattie B’s because of the hot chicken. I never really paid attention because I don’t eat chicken, but I had also heard about the banana pudding. And I love banana pudding, so I obviously got some. For me, Hattie B’s was another stop where I mixed and matched sides. I got mac n’ cheese (again lol), pickles (I’m weird), and banana pudding. The sides were a good size and definitely filled me up. There were other options like beans, coleslaw, potato salad, and fries too, which would make for other potential choices. Even if trying out different sides isn’t really your thing, I think Hattie B’s is a place you have to try in Nashville.

Two Ten Jack

This was by far my favorite place we tried in Nashville. I am a huge ramen fan and am always craving it, so I was so excited to try Two Ten Jack. The wait was relatively long, but it was a Saturday night, so that is probably why. We got miso edamame as an appetizer and I really liked it. I had never had any specialty edamame before, so it was a fun change to something I eat all the time. For my main meal, I ordered the yasai shoyu ramen (a veggie broth base) and added an egg. It was so delicious and filling. But I could have had another bowl because it was so good. Overall, we were all super satisfied with our dishes.
