Documenting My College Life

As I have mentioned before, I started a YouTube channel with my roommate/best friend, Lauren. It has become one of my favorite hobbies. We basically just film whatever we do each week. I love it because I will always have all of the memories to look back on. And I can see how things have changed or stayed the same since the video was made. Vlogging also gives us a reason to do more adventurous or different things with our time, so the videos aren’t super boring to watch.

Our channel only has a small number of viewers, but it is cool knowing someone enjoys watching the videos each week. We are going to stick to vlogging for the next couple years of college and maybe even longer than that. I feel like it is a hobby that will only get more fun in the future.

The Best Kind of Days 

The best kind of days are the days when… 

You wake up rested and with a positive mindset 

You get to see the sunrise or a beautiful view from your window 

The morning is warm (relative to the current season) but just cold enough to wake you up even more 

Class is engaging and you are enjoying what you are learning or at least retaining all of the information 

You smile, laugh, and talk with the people around you 

The sky is so blue that it looks like summer even if it is winter 

Something surprising happens that shows you that things will fall into place and that one negative thing doesn’t mean everything is against you  

You see your closest friends or family members 

You do something you are passionate about or take time for your hobbies

You have one of your favorite meals or snacks 

Homework seems easy and is almost fun (using the word fun very lightly here) 

You laugh until you cry 

You take time to reflect on your life and work towards your goals

You can check things off of your to do list 

You have time to relax and do as close to nothing as you want 

You feel more thankful than ever for everything in your life 

You feel like you did something productive at least once that day

You get to lay in bed at the end of the day thinking about how amazing life is and how excited you are to do it all over again 


Half Marathon Training Part 2 

It’s been about 3 weeks since I last updated on my training. It has been going really well and I always feel so inspired after my long runs.

However, there are those days when the last thing on my mind is running or I feel like I don’t have time, but once I’m out the door, I never regret it.

I think this training has helped me fall back into loving my long runs. For awhile I was always doing short & speedy runs, but now I have embraced runs over an hour where I can be by myself or enjoy my music.

So far I have been doing 8-9 miles for my long runs. I actually have a lot of time before the race (about 2 months) so I am doing a few of the training weeks more than once. It is kind of a nice break that way especially during stressful weeks of classes. I have begun to incorporate more hills (when it is not freezing outside and I can escape the indoor track) into my runs because the course I will be racing is full of them, and I don’t want to be too surprised.

I recently changed up the music on my iPod shuffle (I don’t know how people can stand running with their phones). It was a great decision. I was so used to the same songs playing over and over each day, so switching it up has made training way more fun. I get more excited to keep running because I get to see what song is next.

The songs I listen to are pretty random and that is good for me because the variety of music helps me speed up and slow down during the longer runs. It is a good way to mix it up so I don’t get super bored. Songs like “Fly With Me” (Jonas Brothers), “Just Over” (Luke Bryan), “Follow Me” (Hardwell feat. Jason Derulo), and iSay (Wiz Khalifa) have been some of the best.

Overall, I am having a lot of fun and always feel so happy after I get my longer runs and harder runs done for the week! I hope anyone who is training for a race is enjoying it and feels ready to take on their race! Also, I would love to know what you listen to during runs, whether it is music, podcasts, etc.


Cottage Cheese Take Over 

As I have mentioned a million times throughout my blog, I love cottage cheese. It goes with everything in my opinion. I wanted to share some of the ways I have added it to my meals because it has the potential to be a part of every meal, sweet or savory. 

The most classic way for me to have cottage cheese is with vegetables and/or brown rice. It makes a great sauce, almost like macaroni and cheese when paired with rice. And the cold temperature of the cottage cheese with the warm rice or vegetables is perfect. 

Cottage cheese mixed with salsa is one of my recent favorites. The combination is basically a healthier version of queso. I dip either tortilla chips or carrots in it. Sometimes spinach too. I would definitely recommend it if you need to take care of a queso craving. 

Cottage cheese and peanut butter is something I tried just the other day and it tasted surprisingly good. 

Cottage cheese as a salad dressing is another classic. Sprinkle some avocado and blueberries on top and it’s a perfect salad. 

Cottage cheese pancakes are my favorite breakfast. It is a great way to add lots of protein to something that is usually primarily carbs. Blend cottage cheese, rolled oats, vanilla, cinnamon, egg whites, honey, and baking powder and you have a perfect pancake (I have definitely posted this recipe with exact measurements in a prior blog – “My Favortie Recipes”). 

Pasta isn’t complete without cottage cheese. I like to top my spaghetti squash or regular pasta with some marinara sauce and cottage cheese. 

Oatmeal also tastes great with cottage cheese on top. I recommend putting it on maple or cinnamon oatmeal. The cottage cheese really helps cool down freshly made oatmeal and makes the texture of the oatmeal even weirder. The same goes for scrambled eggs. 

There are endless possibilities for cottage cheese in my opinion, but these are just some of the best I have tried so far.
